Tomato Basil Soup

There is nothing better than a warm bowl of soup on a cold day. Although it’s hot in Texas right now, I am dreaming about this cozy meal. This is the best Tomato Basil soup. Save this for the next cold day at home.. or if you’re like me and have a pregnancy craving!

What youl need:
▫️ 2 carrots- diced
▫️ Onion- diced
▫️ Celery- 3 ribs, diced
▫️ 2 tablespoons of tomato paste
▫️ 4 cups chicken broth
▫️ 1 teaspoon dried Oregano
▫️ 1 ½ teaspoon dried basil leaves
▫️ ½ cup flour
▫️ 1 cup parmesan - grated
▫️ 1 ½ cups half and half
▫️1 teaspoon salt
▫️¼ teaspoon pepper
▫️¼ cup chopped basil
▫️2 cans diced tomatoes
▫️1 stick of butter

To prepare:
▫️ Saute all vegetables
▫️ Add diced tomatoes, tomato paste, chicken broth, and seasonings minus salt & pepper
▫️ Puree soup in a blender
▫️ In a different pan, melt your butter and whisk in flour. Add a spoon full of the pureed soup to the pan. Add this mixture back to the soup pot.
▫️ Stir in cheese, half and half, salt, pepper, and basil.

This is best served with a grilled cheese! Enjoy!
